Just Finished 30 Pouds of Canadian Bacon

Never thought this would be done
30 pounds of CB, vac and pac'd and ready for delivery
Tons of work, almost tok the fun out of it
Could not fit a bread crumb in the fridge for a week !
Have another order now for 12 pounds and a 10 pound order for peamal bacon
I might as well just double it as it will be sold before its made

It funded my grinder acquistion so its not all work and no play
This started out as a hobby / foodie thing
I just have to find time to start making sausage now
God knows what will happen if my sausage actually tastes good....   LOL
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

That "almost" is the part that keeps me from doing large quantities and selling it. I don't want fun to turn to work.

I have a few friends who have told me that i could sell what i smoke. I think it would become less of a happy time and more of a chore.
If it has eyes and a head,I would probably eat it. Eh

Now people want side bacon, willing to pay $10 a pound
That makes it hard to say no

$10 a pound I thought I was being steep with the $4 a pound I was charging the few I sold some belly bacon to.

Good work Oakville I know it can be quite  job. I had lots of customers at the lake last summer so I made mainly jerky for them at my schedule and charged them for the cost of the ingredients. They were happy and so was I. Piker

10 bucks a pound is insane
They said I will pay 10 bucks a pound for this, I think they are nuts
The overarching theme here is I did not want to do it !

I was doing some looking around and I seen Artisan Bacon going for as much as $17-18 a pound out in Seattle
