Plain Ole Bris Kit N TX

I made the plunge, now I need to know how to proceed ??? So many questions!!

Is there a starting place that will give me pointed in the right direction, cause I want to start out on the right foot. Just like starting a new job that you are not familiar with, you need a pro to take the rookie under their wing and get him started on the right foot.

I got questions about:
How to burn in the new unit
Which bisquette is best for which food
The smoke and heat settings (how long / temp)
What is the best meats to smoke first (best chance of success)
(thinking about bacon wrapped chicken "cordon blue", turkey or brisket
Is there a certain place I should be looking in the forums for these type answers

I would appreciate the guidance!! ;D

I got questions about:

It's in the manual.  Preheat and then smoke on high for an hour or so.
Which bisquette is best for which food
Yes ;D  It's purely a matter of your taste.  There's a section on matching wood flavor with various meats at the above mentioned link.

If you can be more specific you'll get some answers here.  Probably more than you want.

Chicken is easy and pretty inexpensive if you screw up.  Pork ribs are also a good bet.

Lookup posts for LindaMM.  She made some knockout chicken cordon bleu.

Yes!  All over.  Check out the recipe sections as well as hot smoking.  We're not particularly disciplined so there's also a bunch of stuff in the smoker (original, digital, etc) sections.
