SHHHH!!!.....my candied sweet potatoes secret.....

If you want to have candied sweet potatoes this Thanksgiving but do not know how or do not have time to do them from scratch....pick up some boxes of Mrs. Paul's sweet potatoes in the frozen vegetable section of your store.  When they are done, top generously with mini marshmallows and return to oven to brown.....or blacken to taste.........don't walk away...don't ask!!!  I...being one who can not cook without "doctoring up" whatever I'm cooking add a few secret spices and sweeteners to my sweet potatoes before cooking them.

Remember...if captured....deny all knowledge of anyone named Mrs. Paul!!!!

Ya know, Ray, I think I might pick some of these up.  I don't care for the sweet potato casserole, because I don't care for marshmallows.
However, I love sweet potato pie, and this sounds like it could make a great filling!

The marshmallows are optional.  The sweet potatoes are cubed when you open the box.  I imagine you could thaw them out and mix the seasoning and potatoes in the food processor and make a filling seeing that it would cook in the oven while baking.

I don't care for the marshmallows either.  The last (fancy) ones I did was to cut the sweet potatoes into about four wedges.  Give them a bath in brown sugar, maple syrup and melted butter.  Add anything else you like.  Chipotle powder comes to mind.  Into the oven on a tray at 350 until tender; 30-45 minutes.  No peeling.  Hardly any trouble at all.

Alton Brown had a show (old repeat) on good eats within the last couple of days.  He said peeled, cubed and steamed is the way to go.  Then mash.  Use as is or make a pie filling.

Alton Brown is the "MAN". You can have Paula (Ya'lllllllllll she gives southerns bad names), and the neeley's (looking for him to jump her bones on the show anyday now).

Have 225 of his shows on DVD. And yes I bought them.

CRG, I love Alton as well!!!!  I love his show!  It took Scott a while to get used to his show, but now he likes it too, because there is always a lot of information on that show.
Ray, I did not pick up the sweet potatoes in time to bake a pie for Thanksgiving, but there is still Christmas!
