What next?  Beans to rice ratio?

I have to do the beans in a ~5 qt pressure cooker, but I can move to the big 8 qt CrockPot for the long haul..

Gumbo huh?

STC, do you know how to make a roux?  Trust me son, it's all in the roux.   There's a reason Cohen's never served gumbo.  Hal doesn't know how to make a roux.  Instead he punts it by throwing some okra in there.

You need CRG or Ronbeaux or NePas or me to walk you straight through a gumbo! ;) :D

Well, so far, this is a hybrid pressure cooked 15 bean pulled pork w/ rice gumbo melange...
(for a bunch of people that aren't real high on my 'list')
Not sure I want to go 100% Gumbo prep. (i.e., chocolate roux)

You have most of the ingredients to make Black Bean & Pastrami Soup. You can use any smoked meat instead of the pastrami; such as pulled pork, or some of the Canadian bacon you just made; or no meat at all.

Dang guys!!!  Now I have major hankerins' for soup, gumbo, deep-fried okra, and WTS pulled pork egg rolls!
And I still have to DUST the furniture...............

I'm going to do a little of everything...  15 bean soup mix w/ low sodium beef broth + rotel tomatoes in pressure cooker, blast, add chopped onions and Cajun Trinity, another quick blast, transfer to crock pot and pile on the pulled pork.   Add V8 juice to adjust consistency.      No turkey sausage this time. (will be turkey'd out by this weekend)

No rice this time around, I looked and there are already a couple rice dishes being prepared.  It will be a carb fest for sure.

Please enlighten me.  I didn't think you could make beans or rice in a pressure cooker because they foam up.   ??? ???  At least that's what the book said.

I do it all the time in mine...  You have to use less liquid, though.  And a splash of EVOO keeps the foam in check.

Last time I did the whole bag of Hurst beans, but it made the pot dangerously full.  I might cut down a bit this time..    I did a post on it somewhere, will dig it up.
