Big Cheese

My wife said i could be the big cheese today  :D  ;D  23 blocks.





I'm using apple chunks instead of pucks, i find i get more smoke and a better one.

Nepas, thats a lot of cheese !! What temp do you strive for, and how long do you smoke it?

I've never seen anybody using wood chips in the Bradley. How do you accomplish that? Just put it on the heat pad/thingy (trying to be technical here :) ) and replace when it stops smoking??

The IT of the smoker never got above 60* Perfect for cheese. I put the chips right on the slide, 1/2 cup lasts for around 23 mins then i push the ash off and add another 1/2. I did 2.5 hrs on this cheese. I like to do things outta the norm  ;D

Here is the finished cheese. The 2 large blocks are for my neighbor. The rest are for christmas baskets.

Looks great Rick, I'm doing seven kinds of cheese tomorrow and a big stick of pepperoni if I can get it all to fit. I'm using my homemade smoke daddy look alike adapted to the Bradley.
