I've heard of adding the baking soda during a soak, while the beans cook and, as you suggest, at the end.  I haven't tried it.  

My wife gets Beano in quantity; I don't use it.  I suppose the competition under the blanket at night isn't quite fair.  Oh well.

That gives you an unfair advantage in the "DUTCH OVEN COMPETITION". I always lose that game but thats what happens when you play the game alone. ;D
