Just picked up my 6 racker and I'm braking it in as I type! ;D
Smoker worked right out the box (was worried about that a little).
Thanks all for your input. It helped greatly on my decision.

Mike.

Mike, congrats and hope you got some pics of that thing all brite and shiny,

cause if you are like the rest of us it won't stay shiny long.

Good Luck and Great Smokes.

I'm thinking brisket.
I'll try Habanero's way since I'm new to this diggi and electic stuff.
On a charcoal smoker my brisket allways comes out too tough.
BUT I HAVE A NEW TOY! The learning process will start all over......thank God I have all of you to help!

Thanks for all of your input...U guys rock!

WestTexasSmoker, ClassicRockGriller and Pachanga are veteran brisket smokers too and have posted some awesome briskets here and the recipe site.  You might want to read over their's too to get a good working knowledge and compare techniques.

Congrats on that new smoker Mike. Your going to love a brisket out of it. My last one I used ideas from WTS and Pachanga and it turned out great. Good luck, keep us posted and ask questions if you have em!

If you are referring to the recipes on the recipe site, they are either WTS or Pachanga; unless you are talking about pastrami. :) Sometimes members will get confused because my name is listed in the Last Post column.

Don't worry about it. You're not the first to make that error; it happens a lot.

Veteran Brisket Smoker ..... no way! I just got lucky.

Like HES said I used some from WTS and Pachanga to do mine and I am still excited about the results.

I'd do one tomorrow if my wifie wouldn't think I was crazy. Hell, she does think I'm crazy so I might just do one.

I thought I smelt some smoke sun.

When I herd the news about all the snow we are going to get I spent all day sun checking to make bubble sure everything was ready for winter. They are talking for a high around 11 for the rest of the week. I barley got the Firebird in the shed before it started snowing, that thing only sits 3" off the ground and with those street tires the ass end kicked out on me a bunch of times from Blair to my house. WOW

Now I'm ready for what ever hits us. Glad I got my smoker exhaust hood done and ready for any crappy weather.

So how did your first smoke go?
