Welcome to the forum STM.  I'm a bit east of you in CT  :D

I haven't done sausage yet so I can't help out there.  But, this is a wonderful community.  Kinda like group therapy sometimes  ;D

Hello everybody, The bologna turned out great, the casing did not look as nice as some of your pics, but i think it went really well for my first batch. I think i am looking into a pid for my six rack digital, I plan to do a lot more bologna and stuff that require low heat. I think i will be able to control the heat a lot better since i know that the temps do swing quite a bit. All in all i am very pleased with my smoker and how the bologna turned out. Thank you all for your help, I am new to smoking but i can say i am addicted!!!!!
