Another batch of jerky on the way

Yesterday I took out a hind leg of venison to thaw.    This morning I seperated the different muscle groups, sliced it and seasoned/cured it.   Meat is now in the fridge doing it's thing ;).   Tomorrow I'll put it in the Bradley and smoke it.    Haven't decided which wood I'll use but am leaning towards trying the Crown Royal.

Its sure fun though, gives me something to do when the wife is watching that reality TV crap.
