I think you'll like the taste of catfish. The only time I think they are not as good is when they get over 10lbs (of course this is not common for me). Then we usually brush them with mustard before dusting them with flour or breadcrumbs. Seems to give them a little zing and neutralizes any fishyness (is that a word?). This could probably be applied to the smoked cats as well. Never ate a farm raised cat, maybe they taste the same no matter what the size.[?]
Let your trout go and smoke a salmon instead.
