cheese, pistachios and pepperoni

Finished with the Xmas butts so this morning I had to get going on todays smoke.
Went out to warm up the smoker. Damn its zero F outside today, good day to do cheese but I'll have to run the heat to keep everything from freezing.
Preheated to 150F. Fired up the homemade Smoke Daddy. Removed the V tray, not needed when cold smoking.
Went in and cut everything up and placed on trays. Brought out about an hour later.

Top two racks are Cooper Sharp cheese.
Middle rack is a bunch of pistachios.
Bottom rack a large stick of Hormel pepperoni.
I lowered the temp using a PID to 85 F after loading.


About 3-4 hours and it should all be done. I'll probably take the pistachios out after 2 hours.

Well heres the finished product. Smoked with apple and pistachio shells.
Pistachios smoked for 2-1/2 hrs. and the cheese and pepperoni for 4 hours. Temp set at 85 F.
2 pounds of pistachios, 10 pounds of cheese and 2 foot of pepperoni.

May I ask where you got the basket the pistachios are in?

I picked it up a while back, I think at Wal-Mart or some place like that. It is actually a desk accessory to hold papers. It is bare metal and I only use it for cold smoke so I'm not worried about any problems using it. Works great for stuff like this and fits the Bradley rack like it was made for it.
