Surely there is another thread somewhere about Christmas smoking and I have missed it so I'm starting my own.

Tomorrow I'm smoking 2 turkey tenderloins for a friend of mine who mentioned tonight that they were having those tomorrow night.  I asked how they were cooking them.  Their answer prompted me to say "want me to smoke 'em for you?"  Wanna guess the answer?

Christmas Day I will be smoking/roasting 2 Tony Chacere's Turduchens roasts.  Jan and I went "Old School Deep South" for this Christmas.  Seasoned green beans, glazed carrots, garlic cheese grits.  Oh, almost forgot the first course..shrimp and crawfish chowder.

Jan and I want to wish all of our friends on the forum a very Merry Christmas.

Now, what are you guys smoking/cooking?

I have four (4) bacon bellies that need to be cut up should make about 12 nice chunks. There is 2 hams in the coolers as well. Need to get them froze here real soon. Probably wont do much smoking. With all the ice falling around here.
Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Depending on the weather (was almost 80* here today) I have a bunch to do.

Turkey (boneless) breast stuff with Dirty rice that will start on the Bradley for the
smoke and finished on the Traeger for the heat.

Turkey in Traeger.

Bacon wrapped (both reg and turkey bacon) Boudain balls

Habbs syracuse potatoes

T2 Smoked oyster dressing

WTS Smoked pork egg rolls convected in the Traeger

Charcoal grill chicken legs and thighs

Smoked pork Tamales (already done)

And right now I have 2 Boneless chuck roast taking a ride in the Bradley
1 with a rub  1 with rub and a carolina sauce.

I think I forgot something.

Seems an odd way to celebrate anything to me but to each his/her own.  Merry Sobriety!

Interesting. Our family has decided on a sorta of North Carolina menu. My father's side of the family is originally form there. I have to contribute the pulled pork, I had smoked a ham for another relative who will use her recipe to glaze it.

Oh man Deb, I can't wait for that gift to arrive.  ;) ;D Everything looks great, good idea with the tree sticky buns.
I'm not smoking anything tomorrow (Xmas day). Thats all I have been doing the last three days. I do need to make some snack sticks maybe this weekend.
Tues - two pork butts, Wed -cheese/pepperoni/pistachios, Thurs - ABT's (4 kinds), moinkballs, bacon wrapped itialian sausage bites.

Heading down the street to the in-laws for the big feast. I'm bringing a smoked turkey if it will hurry up! It's on 14hrs and 22 minutes now and the IT is 164 so I think it will work perfect.

Made a large flan for desert in instead of my usual pecan caramel cheese cake.

Green bean casserole as well.

After that is over with I'll be plugging in my "I'm not supposed to know so act surprised" gift from the MIL. A Beer tender! Fortunately I bought the little keg early so I don't have to wait around to use my surprise.

Then it's my time to prep for News Years party at the campground.
The fight isn't over until the winner says it is.

Ron, are you getting the one for Heinekin or one of the ones that uses standard 5 liter mini kegs?  I bought one for my husband that uses the standard mini kegs and could only find Becks for it.  If you are getting the standard one what are you finding for beer down there?

Thanks,
Deb
