I am smoking a 12# turkey for Christmas dinner.  It is in the brine.  How long do you think it would take to completely smoke and cook the turkey.  It is 17 deg F outside but no wind and I will cook at 225.

With those temps I would say it will take 6-10 hours.

You may want to transfer to a 325F oven after the smoke is done.

FLBR,
You  beat me to it.  I would smoke for 3 hours at 225 or highwr and then transfer to the house oven to roast as normal.  17 degrees is going to make it hard to maintain consistent heat even with no wind in my opinion.

Thanks.  This is my first use of my Bradley on anything significant.  I have a maverik73 and the Auberin PID so I will see how it goes.

The turkey turned out great.  I used Smokeville's cranberry brine recipe with a few additions.

The family and guest loved it.

Even though it was cold outside, I just strapped on the packing foam that the OBS was shipped with and the added insulation worked fine.  It would have competed in about 7 hours, but I had to slow it down until the guests arrived.

No pictures though!
