Sweet Smoked Almonds!

I was wondering if anybody has a good recipe for sweet smoked almond! I've seen a couple of recipes for smoked almonds but none of them seemed sweet to me. Thanks in advance for the help.

Here is a link to an earlier post of mine.

I mentioned walnuts in the post, but this will also work for almonds.

I didn't smoke the walnuts but I think a 1 - 1/2 hour smoke with Apple wood would be very tasty. I would smoke before going onto the next step. Hope you enjoy them!!

Thanks for the link! It so happens that I saw you link and planned on giving it a try. I'm trying to decide to smoke, then apply seasoning or season and then smoke.

Well I'm finally getting up the nerve to try the almonds. Trying to decide how long to give them smoke though. I think I'm going to try one 1:20 minutes. I was thinking 2 hours but I'm not sure how well they will take some and don't want to over do it.

IMHO 2 hrs is fine. Thats how long I do mine.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

I smoked the almonds last night for 120 minutes and they had no signs of being smoked. Is apple to light to smoke almonds and also did me cold smoking the almonds not help the process. If you do heat while smoking at what temp do you do it.

Cold smoking the almonds shouldn't have effected the smokiness.  I normally smoke almonds 2-3 hours.  I have learned that smoked nuts as a whole will become much smokier if allowed to sit overnight in an airtight container after having been brought in out of the smoker.

Hopefully 24 hours will make a difference on yours.

I have not done almonds but pistacios definalty pick up the flavor and are great.
I have cold smoked and hot smoked.  Both work well but I think I am tending to the hot smoke as being better.
I used 200 degrees but usually have other products in the smoker as well and the nuts go on top. 
Hot may aid to smoke sticking to the nut as some of the natural oils may surface on the nut and make the smoke stick.  Don't know for sure though.

I just smoked 2 cups of almonds for 2 hours using hickory at a temp of 200 deg. My wife says it makes her think of taking a bite out of a campfire! I intend on giving them a quick roast in a 350 oven for a few minuets and then candying them. I'll let you know how they turnout!

but how long should these last in a sealed container (not vac sealed, just an airtight package)?

I am doing a bunch of nuts for Christmas, and these would be a great addition.
I just spent $12 K on this Honda Accord! Why can't it tow my boat?!?

Well I gave her my best and this is what i came up with.  :)

Started with finding a recipe for Crock Pot Candied Almonds.



Ingredients ready to go.



Meanwhile  .... why waste three hours? :)



Whole Batch in Crock Pot for three hours.



After 3 hours 1/2 the batch into the Smoker for 1 1/2 Hours



Final Product



To be honest I could not tell the difference between the smoked ones and the ones finished in the Crock Pot. They were both very yummy and satisfied my sweet tooth  ;)
I may have to have a few beers and think some on this to get a better smoke blend to the sweet.
