Smoked Chicken Tetrazzini

I tried this tonight with some leftover smoked chicken and it was very tasty considering it took about the same effort that Hamburger Helper requires.  It seriously only takes about 25 minutes including baking time.  Keep in mind that I don't use measuring spoons so this is a good guesstimate.

1 8oz package regular spaghetti  (not thin or angel hair, it doesn't turn out as good)
1 10.5oz can Cream of Mushroom soup
1 10.5oz can Cream of Chicken Soup
1 small jar pimiento
1 1/2 to 2 cups cubed or chopped smoked chicken
2 Tbsp mayonnaise (not salad dressing)
1 1/2 cup sharp cheddar cheese
salt pepper and garlic to to taste

Cook spaghetti according to package.  I do the rest of this while the noodles are cooking so they don't get cold before I mix everything.
Combine both soups, chicken, pimiento in a pan and heat to simmering. Season sauce to taste and let it cook until the noodles are done, about 5-10 min. Add  mayonnaise. Drain noodles and add to the sauce mixture.  When it is combined add 1/2 cup of cheese and stir.  Pour in Baking dish and cover with the rest of the cheese.   Use the broiler in oven to melt the cheese and it is done.

I have always been one to do a lot of cooking. With a three and four year old it is easier most of the time to stay at home so we only eat out a couple of times a month.  I'm just excited that I have something different to work with.  We are cooking ribs and butts this weekend and I can't wait to put some of that smoked butt in my Brunswick Stew.  We'll keep you posted but with better pics next time. :D

Funny you should post this.  Last night I just made the similar dish, but I didn't have any chicken smoked up :'(!!!  It was the first time making it.  I saw the recipe somewhere and thought I'd give it a try.  It turned out great!!  I'm going to try it with some smoked chicken next time!

Mrs H, I am going to make this.
I have made turkey tetrazzini, but Mr did not really like it.  I think the smoked chicken would put a different spin on it, though, and I think he would like it.
