Brisket "point" "flat" ???

I have never had brisket before.  (Soon to be remmedied).  I read about references to the brisket "Point" and "Flat".  I assume by looking at the pictures that the flat is the strips of meat cut from the brisket.  But what is the POINT?

Has nothing to do with the way the brisket is cut.

a brisket is actually two pieces of meat separated by a layer of fat.

Brisket with both pieces together and not trim from butcher and that is called a packer cut.

The bottom part is the flat.

The top part is the point.

Geez who woulda thought that?

I'm sure someone else will tell you more.

CRG has given an excellent description of the point and the flat.

The only addition to his statement is that each piece is handled differently.  I would defer to CRG on this also.  CRG has his MMH degree (Master Meat Handler).  I believe he slaps one piece and spanks the other but I may have that mixed up with his butt rubbing.  :D

CRG, could you expand on this matter?

Also, CRG, I am glad you changed your avatar from that little man running around the interior perimeter of a box.  He made me dizzy.  This new one makes me .......well, it still makes me dizzy.   :o
