Bone Side on top or bottom

Like the subject is asking I am wondering if you should place your spare ribs with the bone on top or botttom thanks a lot in advance

I did see an old guy on one of those travel-around food shows...
He had a huge built-in-the-wall pit in this big BBQ joint - and swore by "bones up"
I think the Neely's do bones up too.

The theory is that juices collect in the concave area and constantly "mop" it.

However, seems like nonsense to me.  BONES DOWN.

Does it matter if the membrane is removed before or after cooking? I find it easier to peel after cooking the ribs. I actually know a guy who was raised never to waste anything and eats it.

I've only seen people remove it before cooking....once I realized it was better with it off.

I wouldn't take it off after cooking - you would be removing smoky goodness and throwing it away.  Leaving it on is  not a biggie - it just gets sorta papery - unless you foil then it might turn pliable again.
