Adding more paprika will make the blooming sausage get darker. It does not impart the taste that much.

California Sweet paprika will not impart a taste.

I use either hot hungarian or smoked paprika.  Found this mennonite store that has bulk spices for really cheap  ;D  I get 1/2lb of paprika for $5.29
