Butt Its been a long time,have questions

Hi guys and gals, It been a few years since I've done some pulled pork and I have couple of questions. I covered it with plain yellow mustard and rubbed it with Jan,s rub. I did this last night and put it in the fridge for a overnight nap. I was going to throw in the bradly tonight to have it ready for tomorrow. Its weights around 6lbs and its boneless. So I was wondering what time to put it in at because its going to be around -5F here during the night. I plan on eating around 6 tomorrow night and have read here that a few of the butts lately are taking a long time to finish. I'm just looking for some addvice from the pros here. I know that each butt has its own time to finish and that there is no set time. I was hoping to have it done around 3 in the afternoon so I FTC it for a few hours. I was going to smoke it with 3 hours apple and finish cooking at 220F until the IT temp of 195F. I will also bring the roast up room temp before I put it in the bradly and then let it dry before turning the SG on. Any addvice would be greatly appreciated. THANKS db.
I'm also thinking of using HABS vaunted vinigar sauce to, and I'm also looking for a sweeter sauce to use also any suggestions are welcome. Thanks ;D

Given your local temps, I would put it in around 1800 tonight.

You can add more brown sugar to the Vaunted Vinegar, or use rice wine vinegar.

I did a 5 lb one on the weekend.    I put it in at 9:00 pm at 220.    It was almost done at 6:00 pm the next day and that's after I turned the temp up to 230 to speed things up.    IMO 1800 (6:00 pm ;)) should be about right.

You dont really need to FTC butt. Just put in in a pan when its done to cool off enough to handle then pull. You can FTC if its done early.

 Thanks for the help guys, it was a good thing that I put the butt in at 6pm. Everything was going perfect, I put 4hours of apple smoke on it and after the SG turned off I changed the water bowl and had a peak at the roast and it looked great. Then I went back to check on it at 12.30am to tuck it in for the night, the it temp was already at 160F so i turned the cabinet temp down a little and went to bed. I woke up at 6.30am and went outside to check on it and then the fun started to happen. I looked at the cabinet temp and it was icecold, the butt it temp went down to 55F. Come to find out that some time between 12.30am and 6.30 am the power breaker that runs the smoker had tripped. My air compresser also runs off the same breaker so it must of tried to come on during the same time frame and popped the breaker, so next I,ll make sure the compresser is off. So now what to do? Well first thing to do was reset the breaker turn to heat up to max, then change the water bowl with hot water. When the cab temp came up 220 I left it there. By 3 pm the butt was up to 190 so FTC till 5pm. At this point I wasn't,t sure if the butt would pull or if might be a piece of rock. After I unwrapped it I was very surprised, it fell apart and pulled with no problem at all. So I guess supper wasn't,t ruined after all. Our guests loved it and there wasn't any leftovers. ;D

db, don't forget your maverick has a low temp alarm that you can set for when things like this happen during the nite.

It sure looks nice though!

Thanks guys,  Kevin I wasn't worried about it sitting there because it was -5F that night and it temp of the cabinet was colder than my fridge when I woke up. My maverick wasn't even registering so it must of been below 40F. CRG the maverick thermometers that I got do have a alarm but do not have a wireless display so they have to stay with the probe. I think Its time to buy a new one with a remote display.

The remote has helped me a few times. (Actually saved my Butt!) ;D
