Just finsihed a couple of sandwiches here as well and I could go for some of those briskets!!

What in the Heck did you do to your Maverick?? Looks like it went swimming in the pool with that last brisket you did in the oven and is covered in juice.

I used to have it sitting on top by the vent...can you say smoke penetration!  ::)

Smoked Brisket, dont get any better than that.

I havent fired up my off set sense I got the Bradley but I dont cook for crowds any more eather.

As always the briskets you prepare look great.  What grade of brisket do you usually choose?  Keep in mind that I'm stuck in Kentucky where the available brisket inventory is limted to whatever Sam's Club is going to have.

Thanks Ky....Choice and Select are the usual grades around here, and quite honestly with brisket I don't see to much of a difference except in price.  I also get most of mine from Sams, hard to beat 1.68 lb.

I see both Choice and Select here too.  Wasn't quite sure if I should choose one over the other.  Won't worry too much about it then.
