Stuffer Gone Wild Part 2

Casings were finally here when I got home tonight
Had some ground beed and poek butt left to use up
New stuffer to play with
large salamis, cooked



They are stting up overnight, will find the smoker tomorrow for some flavour and to be cooked
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

I just had a scary thought
These are fibrous 2 1/ inch casings
Do I need to do anything to them before I cook and smoke?
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

That was late and after a few beers
I should be more careful next time

Thanks for the spelling checkers or no one would be able to read my posts.
I'm always typing letter in the wrong places, never used to do that.
For example, teh = the plus many others.  :)

Start with a cabnet temp of 130 F and hold there, aprox an hr, till the casin quits sweatin THEN start the smoke and smoke for 3 hr. After the smoke raise the temp to 150 F and hold there for 2 hr then raise temp to 170 F and hold there till the IT hits 152 F for at least 30 min or till the IT raises to 153 F.

I have a meeting to go to around 12 45 and wont be back until 4 ish
I am almost thinking about letting these go longer around 145  150 and boosting the temp when I get back

Just dont boost the temp above 180 F or you will fat out the sausage.

The ones you don't use, just give them a kiss and pat on the head before you go to bed.

Soak casings in warm water for 20-30 minutes prior to stuffing.

Well all did not go as planned !
I had to go to a meeting Tuesday afternoon, I left my DBS on 180 F while I was going thinking when I got back at 4, in the salami would go
and it would be done by bed time.  NOT

Meeting does not finish until 5 30, dont get home till 6 30, salami have been on a rack on the counter and at room temperature for the day.  I am
thinking its smoke these babies now or into the bin.  They were not going to the bin.  In the smoker they go.  Gotta ramp up the the temp and
we are at 180 so when the salamis  go in, they head to 130 for an hour, not south from 130.  Add to this I am getting up at 5 AM the next day for
a mid week ski day.  Nothing is simple.

They finally hit 153 at 3 AM.  I am sleeping, the wife is still up. Yes an amazing woman.  The salami are  sitting on the kitchen counter when I get up and
I haul them out to the garage for cool safe keeping. 

Pics to  follow tonight.  I have not sliced one open yet.  I have not seen the wife since Tiesday night as our schedules seem to be opposite.
I have a feeling I could get it with both barrels tonight.  LOL  I might be sleeping in my smoker tonight or maybe I can make peace with a salami
