Todays Jerky

This is continue jerky from the sausage posting.

I got the jerky drying some. Alternate placement on the racks creates the natural air flow to be disrupted over the meat.

Geez NePa, there must be a constant line of animals parading into your home.  A one way trip though.   :D

NePas, in a lot of your jerky posts you put the product in a paper bag. Why is that? What purpose does it serve?

When i lived in Amish country i met an Amish man who did butchering, smoking, sausage, jerky. He put all his jerky and sausage in a brown paper bag. I asked why do you do that and he sais the bag absorbs all the surface moisture, oil and fat. Thats why i do that.
