auber probe placement

I just got my auber pid dual probe with the cabinet mount probe.  They want you to put this right below the top rack.  Is this the best place to put it? Also, just breezing through the instructions and they don't look that easy to follow  :-\.  Just got done working 16 hours so that could be it, too.  Thanks for any comments!

I have the single probe and a 4 rack OBS. I mounted mine just below the rack that is second from the top.

If you have a 4 rk, most of your smokes will be in the middle two racks.

If you place it too high, the lower racks of product will be at a higher cooking temp

than the top.

Gusrobin is probably on the money.

If the probe was not stationary, you would place it below the lowest rack of food.

So you can kinda decide from that.

I mounted mine center of back wall about 1" above second rack in a 4RKDBS, seems to work great for me and remember to drill from the inside out that way theres no second guessing where its going

2nd rack from bottom? That would be a good spot.

oops sorry forgot to specify which second rack, CRG of course is right second from the bottom

I have the 6 rack so I think I will put it below the 3rd rack from the top.  I was wondering if the lower racks would cook at a higher temp if I put it to high.........thank you for the input

IMO. if I had a 6 rack, I would place the probe somewhere in between the second and third rack from the bottom.

On a 6 rack, the middle 4 racks is where you will be doing the majority of your smoking/cooking.

The order of food placement in my 4rack is:

2nd rack from bottom, then the 3rd rack, then the top rack, last the bottom rack.

I am still debating.......I fatted out the last batch of sausage I made and that's what worries me.plus I hang my sausage so that I think makes a difference too :-\

I hang mine too and have not had a fat out yet, but I do tend to rotate front to back only at least once some times twice

I rotated front to back them also, but it was the bottom ones that fatted out.  Probably had them too low. I thought I had them high enough from the bottom, but I guess not.  Maybe I need a fan kit, where do I find one?..  I am worried about making summer sausage and the bottom of the sausage being overcooked and the top being raw.  I am very new at this and any suggestions and advice is very much appreciated.  The knowledge and the willingness to help people on this site is incredible..  I've already learned so much here..

Wow, seems a little spendy classicrockgriller, do you think it is worth it?  I will probably basically making sausage more than anything and if this is what it takes to keep the sausage smoking at an even temp, than I will invest into it.oh, and oh ya cool avatar

I'm sure you could build it cheaper but having everything all together in one package and ready to go is worth something to me.  Then factor in the cost of a batch of sausage if you ruin it and it really is cheap insurance for a bit of peace of mind.  I haven't added a fan yet but when I do I was planning on that exact kit.
