Salami

This is the first time that I made salami. I used Rytek's recipe (Kosher salami). Thought I would try something not too spicy for the first time.
I did find it somewhat sweet. Next time I will add some ECA or fermento. It is missing the "snap"

Go to the next page, that will be closer to what you are lookin for. Its Coto Salami, my book is at home so I could be wrong but the Coto is great.

I put allot more garlic in mine.

I used brown sugar instead of corn sryup solids.

Is the sweatness the same?

I made 2 of those about a month ago and one is gone now   LOL
I have requests from people to make more

I used a smoke salami kit. Next one I will do the same but add some garlic and some peppercorn  and
whatever else catches my eye when I am mixing things up
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

Corn syrup solids are about 3/4 as sweet as brown sugar, that might be why your sausage is "somewhat sweet"
