PA Dutch Ring Bologna

This is 4 1/2 pounds of ring bologna. Found the mix in a ziplock baggy just marked PA ring bologna  ;D  Cant remember where i got it  ???

Mix and cure 1 with 5 oz water.


80/20 ground chuck.


BJT 1" Tube ready


Protein lined collagen rounds.


Tied and ready for smoke tomorrow.

Had to move some snow around but i got the bologna hanging at 140*

Casings are dry and now going with smoke. Hickory 5 pucks. I use a rack under them just in case one falls.

Reminds me of when Dustin had his 1st paycheck from burger king. He cashed it and got $111 in ones  :D I said lemme see the dollars. I said i'm going to toss them in the air and whatever dollar stays in the air you get, whatever lands on the ground i get  :D  :D Took him about 4 seconds to figure it out   :D  :D

They look real good! Where's the knife and fork? I'll be right over with the brew.

Rinsed and cooling now. Total smoke & heat time hanging was 10 hours. Refer tonight and taking one to Bragg and one goes to neighbor.

Mmmmm, One thing you can't get in south florida is Ring bologna like you can in Pa dutch land.     :D  I could be a Wutz and make that All  :D

The casing peeled pretty good from the bologna. I'm happy with the end product.




I just had to cut one and see and taste it  ;D
