Meat Loaf Cordon Bleu Florentine with a Twist!

Got this recipe from Cookshack.com:

2 1/2 lbs lean ground beef (we used 1 1/2 lbs ground beef, 1 lb ground venison)
1 C dry bread crumbs
1 C milk
2 beaten eggs
1/2 C diced onions
1 T salt
1/2 T pepper
1 T Worcestershire sauce
1/4 T dry mustard
8 oz smoked ham (we chopped the ham)
6 oz smoked Swiss cheese (we chopped the cheese)
2 - 3 bunches spinach, cleaned (we chopped the spinach)

Place ground beef in large mixing bowl.  Mix in by hand bread crumbs, milk, eggs, onions, salt, pepper, Worcestershire sauce and dry mustard.  On a large piece of parchment of waxed paper, pay out the meat mixture 1/2 " thick or thinner, to a flat shape of approximately 12" x 18".  Layer ham, cheese, and spinach, leaving 1" margin of meat.

Take edge of paper closest to you and roll "jelly roll fashion" the long way.  Pinch ends of roll to seal.

Place in loaf pan or casserole dish.  Smoke-cook at 225 degrees for 1 hour, 45 minutes with apple wood. 

Remove from smoker and pour 3/4 C BBQ sauce over top.  Let set 10 minutes before slicing.

The twist???  Seemore did a bacon wrap around the loaf!

The cook time was longer than what the recipe stated.  We smoked the loaf to an IT of 180 degrees.  We also used a variety of pucks as we were at the end of our pucks.

It was very tasty!  The bacon enhanced the flavor of the meat loaf, and we used our homemade BBQ sauce.

All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.
