Cure?

Is the cure that comes with HM cure #1? In some of the recipes on here for ground meat jerky it calls for 1 teaspoon / 5lbs but in the instructions for the HM stuff it's 2.5 Tablespoons. If I'm using the cure form HM in other recipes just want to know how much to use.

I think there is cure#1 in the HM mix, but there is other stuff too.

I would use the 2.5 Tabelspoons.

Thanks for the info, guess I should just get some cure #1 instead.

I feel you have more control over what you put in the cure mix if you add cure#1 at the designated amount per pound of meat and you can vary the other constituents of the cure mixture to suit your taste.  It gives more room for experimenting.
