cooked up some maple pork bellies tonight . tried out the (good eats) way, you got to try this. it really brings out all the flavor!!! and so easy,
Place the strips of bacon onto a sheet pan fitted with a rack and place into a cold oven. Turn the oven to 400 degrees F and cook for about 12 to 15 minutes, depending on how crispy you like your bacon. Remove from rack and drain on paper towels. Enjoy

didnt have a fitted pan with a rack so i took a cookie sheet pan with sides on it , then took a bradley rack turned it upside down  and layed the bacon on it,

I did see that.....I do want to try that.....Thanks for reminding me.  Back in the day for the weekend folks at the resturant we put large amounts of bacon on large pans in the convection oven and cooked it that way.  You would be surprised how mant resturants DEEP FRY there bacon.

My Mother-in-Law cooks bacon in the oven. She coats the bacon with some kind of rub or mustard and rub or something. It's always good. I'll try to get that recipe and post it.

We love the Good Eats show. Alton Brown is quite the cook.
Did you use the pepper on your bacon?

Have never tried a peppered bacon.  You know who has a gret tasting bacon is Arby's.  It's sweet AND peppery.  I would love to work on that combo..I have my eye on some Jalepeno right now.  But that could be Wackers new adventure.  Man got to get through this AAU BBall stuff.
