How fast does your 610 spin?

Just used my Chef's Choice 610 slicer for the first time on Monday.  It worked well, but I was surprised at how slow the motor was.

I used the serrated blade that came with it and noticed that the top 3/4 of the meat would slice great, but the bottom quarter would just shread.  I have also ordered the non-serrated blade to give it a try for the really thin slices.

Is this normal?  Are they supposed to spin slow?

ArnieM

The spin speed is normal.  I have a remote IR thermometer but not a remote tach so I can't really tell  :D

I got the optional blade when I first got mine.  It works well.  Actually, I find both blades work well.

Yeah, it doesn't whip around like a skill saw...   Nice and easy.
That non-serrated blade is the way to go..    It'll go thin, with minimal shredding.

I ran 11 pounds through my 610 this past weekend

OTB

Thanks for the replies.  I like your skil saw reference...guess that is what I was expecting.   :D

Hopefully when I get the other blade I can slice even thinner.

Did anyone get the sharpener for this model?  And if so is it worth it?  I am having a hard time justifying the sharpener price when it is more expensive than just buying a new blade.  Also it is confusing to figure out which model works with this slicer.

ArnieM

FYI - This is some beef from the non-serrated blade.

My blade spins slow also. I used to get shreading on the bottom, but I got rid of it by slowing the rate that I push the meat thru. Some meats can go faster but if you start getting shredding try pushiing it slower. It is a pain going so slow, but overall for the money I like the slicer. I got a deal where mine came with both blades for $99.

I just got mine and think it is great! But I do agree with you that meat seems to hang up on that protrusion at the bottom of the blade housing. I will try slicing slower to see if that will cure (no pun intended) the problem.

Thanks for the replies.  As long as the speed of the motor is normal (just wanted to make sure it was)...then I really can't complain.  Mine cost me nothing since I had points through the citibank thank you rewards and they happened to have the model I wanted.

Now to my other question.  "Did anyone get the sharpener for this model?  And if so is it worth it?  I am having a hard time justifying the sharpener price when it is more expensive than just buying a new blade.  Also it is confusing to figure out which model works with this slicer."

No, I didn't get the sharpener.   Do you have a link to it?

ArnieM

This is the only thing I could find on the sharpener.  The bold is mine.  Looks like it's not for the 610.

When you say the bold is  yours, does that mean you own this model for your 610, and it works?

There are two models the 498 and 601...the 601 doesn't list models it is compatible with.

ArnieM

Sorry for any confusion OTB.  I used the bold to indicate the model I found will NOT work with the 610.  That was the only model I ran across.

I"m going to take mine to a local guy who does knife sharpening..
(he's retired Military, and this is his 'something to keep busy' job)

He only charges $5 to do big riding lawnmower blades..

I know he does the clipper/scissor sharpening for the lady that cuts my hair.

I just shot him an email asking for pricing on sharpening my set of Henckles and my non-serrated 610 blade..

mow_delon

Does anyone out there know how to sharpen a serrated edge meat slicer blade?  Not sure on the brand of my slicer, but the blade is getting really bad.  I didn't even know that one could sharpen the blade.

Look in your yellow pages (or ask small restaurants/barber shops) and see who sharpens their knives/clippers..
They've got the tools to do this.

I got an email back from a local guy, and he charges $2 per (straight) kitchen knife for sharpening. Any length.  $2.50 if they are serrated.  $10 to do meat slicer blades.  (he didn't stipulate serrated or not for that one)

I"m going to drop a WHOLE bunch of stuff at his workshop next week..
