Getting ready for the big reception tomorrow...

However, it looks like I have 2X more food than necessary.   They said 100, I guessed a little higher, the final headcount will be more like 50..      Oh well - I've got guys at work ready to buy any brisket that doesn't get opened!

Time to thaw..

(25 pounds cooked brisket, 11.5 pounds cooked turkey)



The rest is in the garage, piled under ice.




Had another turkey thawing, so I threw it on.   It won't go to waste...      Nothing special on it, just some EVOO, some of the leftover rub from last weekend, and a sprinkle of Plowboy's Yardbird rub for color.




Thinking back to the tub...  What did I forget to do??

I put the double 'dry' seal down into the water bath on all of those bags while thawing...    The end after inserting the meat (which usually oozed all over during the vacuum process) was sealed 3 times, and I'm keeping it high and dry for now.   So far, no problems doing it this way.

I sure the 50 or so is in for a real treat!

If it is an Auction tonite, auction off the left over unopened Briskets.

Bet you will have some buyers.

I was going to sell them at work for 'cost', plus my time.

Those big flats were just under 30 bucks each at Sam's.
I used 10 pounds of pellets to do a pair. (roughly $1/lb including shipping)

I was going to sell leftover briskets for $35 a pop, plus a case of beer for my labor.

Be VERY HAPPY that Pendulum did not swing the other way.

I've been on that end cooking on a camping trip.

Fifty??? - You said 30 YESTERDAY!!!!!! - This was AFTER we had already made camp - We were not planning on / had time for a supplemental shopping trip.

I hear ya..

That's why I did the bulk a week in advance...   The RSVPs were due the day after I finished cooking everything.  It was a pain to freeze/transport/store/transport/thaw, however.

We just reduced the portions/thinned out the sauce...

I hope that case is a 2-4 (My Californian cousins, now in WA always loved how we had such large cases of beer and called them 2-4s. They also asked why we had shacks on the side of the road - bus shelters)

I think Snelly has picked up some of Ka Honu's habit's trying to take all the leftovers. ;D

That food definitely will not go to waste.  Looks like you have it all under control STC!

A few years ago I mentioned to a few friends to drop by on New Year's Day for jambalaya and gumbo.  60 people showed up!  Went through 5 gallons of bloody mary's, 2 gallons of screwdrivers and have no idea how much beer.  No one went hungry or thirsty although the folks at Kroger's must have thought they were having a run on Clamato juice.  Had to send a friend of mine there 3times to get more Clamato for the bloody mary's.  Last time I said "Just buy all they have".  He did. :D
