Getting ready for the big reception tomorrow...

In my younger and more wilder days, I worked for a grac chain and they ran Schlitz beer on sale for $.39 a six pack.

I bought a 100 cases and the beer truck delivered them to my House that I shared with a room mate.

The beer was stacked down each side of the living room wall.

Party after party the stack got smaller. I had a "donation" jar asking for $5 all you can drink at each party.

I actually think I made money although I really don't remember. ;D

3rd turkey is sliced, broth & roasters are coming up to temp...  I left everything sealed in the bags for now and added a couple gallons of water to each one.   It will take 2 cars to haul all this into town!

Oh, and my problematic neighbor is moving his inordinate amount of crap out.  Open House tomorrow.   OH HAPPY DAY.

Well look at that. Good food on the table and good vibes in the neighbourhood. Life is good. On top of all the sh#t I am dealing with my landlord now tells me he is going to sell the house I have rented for the last 13 years cause he is tired of chasing the other half of the house for their rent. Happy days ....NOT.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

We put out 3 briskets, and 11 pounds of sliced turkey..    At the end of the night, we sent home ziplock bags of the leftovers to everyone who helped set up/clean up.  I just rinsed out the roaster pans.

We went through about 75 dinner rolls, but after everyone had a sandwich, they went back for more brisket and a dollop of sauce.   I think the bread was getting in the way.


Nice turnout, and I got tons of compliments on the brisket.

Now I have 5 briskets still vacuum sealed.   2 thawed, 3 frozen.     MrsC will take one to school so they can have a teacher's lounge feast, and I will find buyers for the rest at work.


I'd like to thank everyone here for their experience/ideas/tips/feedback...  I would have never dreamed of attempting this 8 months ago.

Take a breather, kick off your shoes and grab a cold one, you deserve it.

I'm glad your smokeapalooza was a great success.  I really enjoyed following your thread over the past few days.  I will be doing my second brisket this weekend for my family and have researching the cowboy braise and hope to have the same results as you did.  This will be the first time I have smoked for my dad and I am really excited for him to try it.  Did I mention he lives in Texas????
Is it bad if my wife refers to the smoker as "The Mistress"?

Good to here you eats were a hit.

I figured the briskets wouldnt stay on the sellin block for long.
