Smoke some

Probably a dumb question, but would like some opinions on how you all wrap your meat in tin foil when using it in the smoker.
shiny side in or out?

Google is my friend :)
Answer
Take it from the people at Reynolds. They make the stuff. They will tell you that it makes no difference which side is in or out. Optical light scatters differently from the dull side than from the shiny side, which is more like a mirror. But both sides absorb or reflect light (and infrared radiation) equally.

Basically I use what ever side is facing up after the wind has blown it off the table three times already and the chunk of meat I am holding is burning my fingers so bad I can't hold it any more and just plop it down on top of the foil. That's the side I use!!

That's interesting, I've always been told if you want to keep heat in put the shiny side in, if you want to keep heat out, put the shiny side out.

I thought the same thing.

I look at it this way, the shiny side reflects heat and the dull side aborbs heat. Then I throw all that out the window because the foil is so thin it doesn't matter one way or the other. The heat will overcome the reflective value just by radiation.

Like I said whatever side is up when the fingers are burning and the wind stops blowing the dang thing off the table that's the side to use!!

I always assumed that the dull side was the non-stick side.
Is it bad if my wife refers to the smoker as "The Mistress"?

I just use it as it comes off the roll, too many other things to think about.  ;D

It doesn't matter to me either.  I believe the foil is actually a laminate (could be wrong) and when the layers are bonded you just end up with a shiny and dull side.

The REAL question is "Which side of the plastic wrap do you use?"   ??? ;D ;D

What ever side is facing up after it has clung to the counter, the side of the table, my hand and everything in between during the 1/2 hour fight with trying to get a 12 inch piece laying flat on the counter-top!!!!

Something about a monkey and a football does come to mind on some day's!! Which is highly dependent on the amount of Adult beverages I have consumed!! Funny part is that is when I create some of my best meals and then I can't remember how I did it.

BTW tell me you haven't had either one of them experiences at least once in your cooking process' ;D ;D
