Butt from H E double hockey sticks

On tap for the past weekend was to feed a couple dozen homeless guys a great barbecue meal.  Didn't go as planned, but came out ok anyways.  Went to Sams for butts and briskets.  Alas, they did not have packers available that day - and I wasn't going to pay $3.89 a pound for a flat.  So for the beef deciced on chucks in the 3 to 4 pound range.  Less expensive than the flats.  Then a couple of butts in the 6 to 7 pound range and some yardbird thighs.

Preheated BDS, put on some rub I had laying around and stuck the butts in the smoker.  5 hours later stuck in the roasts and thighs.  Had the smoker set at 230 but eventually had it set at 270 .  Roasts and chickens got done but the butts did not.  But had to get down to church.  When I got to church, i put the butts in the oven at 350 to try to get the temp up, they were still only 165 - 170 after 12 hours in the smoker.  After an hour, I had to serve, so sliced up the roasts and then decided to slice up one of the butts also.  The other butt (the smaller one) I left in the oven on 350.  Three hours later it finally got to an IT of 195.  15 hours for a 6 pound butt.  But talk about succulent and luscious!   But 15 hours!!!

Sam's must have gotten a good deal on stubborn butts because I had an issue with mine this weekend as well.
Is it bad if my wife refers to the smoker as "The Mistress"?

I used some butts with some GB for salami and they took forever to cook in the smoker
23 hours just seems like a lot but I had the DBS loaded up pretty good

Well done feeding these guys.  You should be happy and proud of what you did for these guys
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Didn't even think about it until after I stuck them in the smoker.  Besides, they had plenty of marbling! and I did not have many of the ingredients.  I had originally wanted to do a CYM slather in honor of my bud Pachanga, but somebody (my daughter) forgot to buy some at the store and we were out.  All we had was some Dijon from Trader Joe's that is some pretty potent stuff and did not want to experiment on something I was serving someone else.   

To top it off with the stubborn butt (deal with those at work all the time  ;D ;D ;D ;D ;D) in the rush to get to the feed, I left the SG hanging on the side of the smoker uncovered.  Knew I wasn't going to be back til morning, but I did not have time to let it cool and put away, besides it wasn't going to rain anyways!    WRONG!!!!
