Just testing and getting set up with photobucket. Here is a picture of my son ready to tuck into Dad's maple smoked chicken. I used a 'chicken stand' and smoked for 4 hours at 210F. That was one beautiful meal.

Recipe:
<u>Brine</u>
1 cup coarse salt
1 cup brown sugar
4 qts water

I brined the chicken for 3 hours, rinsed, then applied (brushed)a mixture of italian dressing, 6 cloves garlic and 2 tbls EVOO.

I brushed the chicken all over and under the skin and stood upright on the stand in the Brad for about 4 hours at no more than 210F. That chicken (as you can see) was a beautiful reddish colour and was very juicy. I used maple bisquettes and it had a really nice smoky taste and aroma.
