Greetings from sunny Mazatlan...

Went on a quick tour yesterday, and we stopped by the Mercato (central market) for a few minutes.   Wandering through the Carne booths I came across this.

Whole side of beef quickly being dispatched:

No surprises here on what cuts you are getting from the butcher.  He'll do it right in front of you.   I'll try to get back for some more pictures - we were pressed for time.

Saw some interesting things at Sam's Club as well.   They looked like that Chuckzilla 'chuck roll' that CRG did a few weeks ago.  Or perhaps the shoulder 'clod'.  It was one HUGE hunk of beef.   Couldn't make out the Spanish label, though.

Wow.

I'll take a brisket and some tri-tip, please.

You know, I didn't see any brisket...   They have pictures of all the cuts, and you just point and ask for it.   I'll get back there when we have more time and get some better pics. You kinda have to keep one hand on your wallet, and be aware of what is going on around you.  ;)

Love that market (and have the t-shirt).  I think they call brisket "pecho" and generally cut it up pretty early in the day for stew meat.  If you wanted the whole cut, you'd probably have to order it or get there before it's chopped up.

I'm wondering if that's the loser from the bull fights ;)

Thanks...  I'll keep an eye out for it.    They seem to go for the bite/stew sized cuts of meat around here.  Or the strips for quick pan frying..

I had Carne Asada at Pancho's the other night and it was fantastic.

Driving up to El Quelite for lunch and some sightseeing today..

Could be - if so, make sure you see the carcass before it's butchered (sometimes the bull wins).
