Orange Jicama Salad

Got this from the wife's family out west...   They had it at a Las Vegas restaurant and raved about it.

ORANGE JICAMA SALAD

1 pound jicama, fine julienne
1/4 cup orange segments
2 tsp. garlic, chopped
4 tsp shallots, chopped 
2 tsp. chives thin sliced, fresh
4 tsp. cilantro chopped
4 tsp. sugar, granulated
1/4 cup rice wine vinegar
salt to taste
white pepper to taste

use fresh oranges ,after segmenting orange, squeeze remainder of orange into salad
adjust amounts of sugar and vinegar to desired sweet and sour preference
garlic, shallots, chives, and cilantro may be adjusted to personal taste.

combine all ingredients, chill

Root vegetable...



Saw them all over Mexico.

They taste like nothing by themselves, but they absorb any other flavors to bulk up a salad, etc.

That's interesting, looks kinda like a potato. Do you put that in raw?

Yep.  Just like celery, etc.

I've had it in Southern CA at my brother's place.  I had grilled some sweet corn and bell peppers, and my SIL diced those up and mixed in Jicima and some Italian salad dressing.   Tasty stuff.


Habanero Smoker

I love jicama. To me the flavor is a cross between potato and apple. It's one of those root vegetables that can be eaten raw or cooked. And it stay firm when cooked.
