Keri's Hog-Apple Baked Beans

I saw this recipe on the Stump's smoker site, so I figured I would give it a shot.

Amount
3 or 4 slices bacon, diced    
2 (28 oz) cans Bush's Baked beans, mostly drained    
1/2 cup Blues Hog BBQ Sauce (or other sweet-spicy favorite)    
1 pound smoked leftover smoked pork or beef    
1 can apple pie filling    
EDIT
1 (15oz) can apple pie filling, pieces somewhat chopped up
1 medium onion, chopped    
1/2 green pepper, chopped    
1/2 cup brown sugar    
2 tablespoons Worcestershire sauce    
2 tablespoons Mustard (prepared)    
1 teaspoon    chipotle or cayenne powder    
1 teaspoon    barbecue rub, your favorite de jour    

Steps
Brown bacon, and saute onion and green pepper in bacon grease.
Mix in remaining ingredients. Bake at 325° for 1 hour, or simmer on stovetop
in large pot for 30 minutes if you don't have time to do them in the oven.
Serves 12.

EDIT
*This is a rather spicy recipe due to the chipotle/cayenne powder.
Feel free to leave it out if you'll be feeding those who prefer
a less spicy taste.




I used some Stumps hickory smoked pull pork that Hal gave me, the smoked bacon from this morning, and some Salt Lick rub instead of the cayenne powder.  The onions and peppers were cooking in a foil pan while my fatty was coming up to temp.

Looks like this when it is all mashed together:




It's in my Traeger now at 275°.   I think I'll give it 90 minutes or so in there.   I'm going to throw something else in with it, so I''ll have to adjust the times/temps a bit.

And that's kinda what it tasted like...   Sweet & Spicy baked beans w/ shredded pork and a little helping of applesauce in each bite.   I've got it in the fridge now and will unleash it on the cafeteria tomorrow.   

I hope it doesn't have too much pepper...    That Blues Hog BBQ sauce has a bit of zing to it.  And I added the Salt Lick rub as well. (Zing * 2)

Based on feedback at work, I will probably do this again - w/ a few modifications.

Bet that would make a great mid-day sandwich. (or a lte nite snack) ;D

Yeah, it has real potential!
One thing I missed (not in the recipe I linked to, but in another version I just read) was to chop the apple pie filling chunks up.   I dumped them in whole.

Next time, I'll give them a quick ride in the food processor. 

I'm going to modify my original post to reflect that little mistake.

These are on the menu today in the office cafeteria...   Definitely a hit.    Had to print up copies of the recipe for her to hand out.

I didn't know what to think when I first tasted them, but after a day or so in the fridge, the flavors all came together.  Definitely a 'must try'.

I left out the Cayenne, as the Salt Lick rub has plenty of punch.

Dang tasty recipe squirt!!! I subbed 1 can of bushes with a can of Santa Fey? (no spell check  ::)) beans. Just right for us. Took just a little of the sweet away but still yummy. That's a keeper. Thanks for sharing.

Also made a batch for the family for Mother's day and they were a big hit!  Everyone loved them from the young kids to adults.  Only issue I had was I tried to use the food processor to cut down the apple pie filling and pretty much ended up with apple sauce.  I ended up using a half a yellow bell pepper since the green gives my Mom terrible heartburn.  And I also had a whole vadalia onion cored out and filled with butter and garlic on the MAK for about an hour or so while making everything else, I then cut it up and added that to the mix.

Delicious!
