So what is everyone cooking for Cinco de Mayo?

I've got about 5lb's of Rancher's Reserve Flank Steak probably in two different marinades.

Traditional stuff for Fajitas.

And some 1800's Margartias.

Pulled pork tacos with leftovers from yesterday - sauced pork form the weekend along with the slaw wrapped up in a freshly grilled flour tortilla.  Will have to break into the reserve Tequila collection - need to get some fresh limes and and an orange or two tomorrow - time for some Perfect Margaritas !

I've been playing with a cucumber salsa.

Might try it again, but will have Reg. Homemade Salsa on stand by.

Had another idea - or had it again- Chili Rellenos with pulled pork and goat cheese.  Doubt I have the time for those.

This is my premium margarita recipe.  Careful because they taste like koolaid and will sneak up on you.

1 1/2 oz Premium tequila (I like 1800)
1 1/2 oz Gran Mariner or any orange liquor
1 1/2 oz Nellies key lime juice (sold on baking isle in grocery) or fresh squeezed lime
1/4 cup powdered sugar

Place all ingredients in shaker with ice and shake for 30 seconds.  Strain into salted martini glass with wedge of lime and olive.

Drink and enjoy  ;D

The Perfect Margarita:

3 oz premium silver Tequila (suggest Patron)
2 oz Cointreau
2 oz freshly squeezed lime juice, strained to remove pulp
1 oz freshly squeezed orange juice, strained to remove pulp

Fill shaker with ice, add all ingredients, shake until your hand hurts from the cold, strain into a large, well chilled Martini glass with salted rim. Enjoy!

Hows about a good recipe for salsa???? My good friends wife makes some killer salsa but she wont budge in the recipe.   :-\ :-\ :-\
