Finsihed my saturday round of golf yesterday
Chicken was getting low in stock
Figured i should start some more bacon since a certain dauggter and husband seem to eat me out of house and home

First stop:  THE chicken man
15 pounds of wings, these are honkin
6 yard birds
some garlic chicken sausage
all grain fed, free run.  These birds eat when they want to and not through another orfice when the machine says so

Next stop:  Packing house
Walk in the door and they have a pig on a spit.  Giving me ideas but I digress
2 bellies please andpull the ribs off if you dont mind.  They are in teh DBS now and 25 pounds of baconis curing in the fridge

While I am waiting for the belly, I turn and see a beautiful slab of strip loin
I ask what the cut date was. The clerk figures about 3 weeks.  Its nicely cyovac sealed
I think I can age that another 3 weeks. Well its in the fridge getting happy
Check back at the end of the month

Into Costco I go.  Pork loin I see.  Schitzel I thinks.  Home it comes. Just came off the slicer and I have a headache from
hammering it out and of course the good old vac sealer wailing away

Well there is no more room for food in the fridge.  I need another one !  LOL

Not sure what is smoking more, my credit card or my DBS
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

Ah yes.
BUT
Bacon, bacon, bacon, makin bacon !
When this slab of beef consuming the bottom shelf of my fridge comes out, it should make for some awesome steaks dying for a little smoke
