Traeger filets

Four prime filets wrapped in bacon, rubbed with some olive oil, salt and pepper. The idea here was to keep it simple. Here's the pic before cooking on the Traeger.



After grilling for about 7 minutes on each side they came off tasting wonderful.  The hickory flavor was awesome.



The filet were wrapped in bacon that was home cured and smoked on a Bradley by my friend Tom.  Here he is enjoying a sip of a single malt Irish whisky.



The sides for this meal were roasted potatos, roasted asparagus and mushrooms in a butter, garlic, cream wine sauce.

Potatos before being roasted.  They're covered in olive oil and seasoning and baked at 425 till golden brown and cripsy.



Asparagus before going in oven.  These were merely coated with a little olive oil.



Mushrooms after cooking down in butter, garlic, red wine and a splash of heavy cream.



Finally, the finished plate.  The mushrooms covered the filet.



What a nice medium rare... going into my mouth... NOW!
