New Member of forum.. and rookie smoker

Hi everyone..  I am a Canadian living in Southwestern Ontario. My wife bougt me a charcoal smoker a couple years ago for fathers day, and I played with it for a couple years smoking mostly ribs and sausage.. no nerve to take on anything bigger. Well now for my 50th B-Day she bought me an Original Bradley 4 rack. Finally.. I am running with the big dogs... tried some ribs on it last night. I tried doing them while in the office, as I live close to work. Put them in at 11:30 with 3 hours of smoke.. came home at 3:30 and wrapped them in foil and put them back in for 2.5 more hours, then unwrapped them and threw them on the BBQ to sauce them. They fell off the bone and actually were hard to handle. This is more well done than I prefer, as I like to handle my ribs when eating them, and the smoke was a bit strong for my wife. Next time I think I will cut back the smoke to 2 hours, and reduce cooking time. All in all.. I love this Bradley for it's lack of attention required, and I am sure after spending some more time cooking and reading other posts, I will be doing perfect brisket and other cuts of meat in no time.

Were the ribs spares or baby backs?

Welcome...  from a Canadian living in the UK.

Perfect ribs are my Holy Grail...  I've never had them turn out the same way twice and would have to say I'm still learning the best way to get a consistent result.  But...  all the results get eaten and enjoyed no matter what, so who cares  ;D

Welcome Gator, for me I made the best ribs last summer on my old Charcoal/wood smoker and for Christmas my wife got me an OBS. So now I'm also starting all over again. I made my first ribs about two weeks ago using the 3-2-1 method (plus a little) because I had trouble getting my temp much above 200 or so. So I suggest reading all you can on the forums and try and try again. My plan "B" is in mind and I'll be trying it soon. Good Luck!

Thanks for all the "welcomes".. it sure does appear to big a huge "smokin" family here.. and I can't wait to be more involved... I actually did a chicken yesterday.. and again .. came home from the office at noon.. threw it in with one hour of apple smoke, and then got called away to a meeting in the afternoon.. so I called a friend and asked him to go over to my house and turn off the smoker for me because I would not be home until after 10PM, and nobody else was home.. he did tell me the chicken was awesome.. I will have to take his word for it.. as that is all that was left...  ;D

The ribs were baby backs Rider.. so I am going to try the 2-2-1 process on the weekend.. and will advise the results.
