Pickled Blackeyed Peas

Was looking thru my index cards of recipes and saw this.

I haven't done these in a while but they are a good summertime food.

Pickled Blackeyed Peas

2 cans of peas drained
1 cup of oil (i use vegetable)
1/4 cup of vinegar
1 clove of garlic, minced (teaspoon, level)
1/4 cup of thin sliced onions (I like more)
1/2 ts salt
pepper to taste

Stir up and fridge overnite.
Quick stir before serving.

Sometimes I put diced jalapeno's in it ;D

Maybe a CD of collections.

When I wrote this out I copied it to my computer file.

Hope you use Carbonite or something to keep it all backed up.

A few japs and some bacon or ham for flavor.

Makes for great eats. :)

Hey CRG, Sorry if I'm being a complete moron...  ???, but have you possibly missed out some vinegar or something to make this "pickled"?  I LOVE anything pickled...  but I can't see what would give the pickled zing in this recipe...  sounds interesting though and I would love to try it.

Expat, thanks. It was 1/4 cup vinegar.

Bet I looked at that 10 and it just slid past my eyes.

I read that recipe yesterday and couldn't figure out what was pickling those peas but figured I was just missing it.  Definitely going to try those.

Sounds like I'm gonahafta try this one.

I can sit down and eat a whole can of peas, hot or cold, for a snack.

Not quite Kevin but here is my recipe. I didn't want to Hijack CRG's post that's why I didn't post it before. Mix up a bowl and get a bag of chips and a couple Adult Beverages and your set for a race, a ballgame or just hanging out in the backyard.

Texas Caviar

3 15oz(?) cans of Black Eyed Peas/beans
½ small red onion, chopped and diced thin
½ cup, + or -, canned jalapeno's, chopped fine
2 cloves of garlic crushed
ground black pepper to your taste
a few good drops of your favorite hot sauce
1/3 cup, + or -, zesty Italian dressing *

Drain the beans, add the rest of the ingredients except dressing. Stir well. Add dressing and stir until your desired consistency, adding more if you like. Let sit overnight. Stir and adjust your heat level, if needed. Serve with tortilla chips.

* olive oil and red wine vinegar can be substituted here.

All amounts are approximate and open to any interpretation
