Can someone please show me how to set up a PID

I understand the know-how from these directions of how to set-up your typical SIMPLE PID controller:

But I want to know how to set-up one for using three types of probes, one for temperature control and the other two into the meat.

I have been looking for guides, and how-to's all over the place but cant seem to find any.

also-- a quick tutorial on how to wire a simple light indicator as well as an on/off switch into the the PID would be great also.

Are you looking to build your own PID or instructions on how to use a PID that you purchased?

I'm looking to build it via Auber Instruments.

I understand the basic wiring of the initial temp probe sensor, the SSR, etc.

I just want to know how exactly are people wiring in three or two sensor probes at a time for different functions-- such as one being an instant meat probe, the other for air temp, etc.
