Wed. Night Dinner - Installment 3

I tend to cook indoors or on the grill during the week.  My goal is to keep it fairly simple and inexpensive but to add a little creativity.  This was all indoors because of T'Storm forecasts again.

Chicken thighs.  Made a paste out of finely chopped garlic, ginger and a pinch of coarse Kosher salt.  Lift the skin and spread the paste in there.  Slather with Island Habanero marinade.  Back in the fridge for an hour.  Cram them into preheated square cast iron grill pan.  Top with a half slice of bacon.  Into a 400 oven for 30 minutes.  Finish under the broiler for 2 minutes.

Green beans.  Par boil for 2 minutes.  Drain and cool.  Cook up a slice of cubed bacon.  Add the beans.  Then add lots of finely chopped garlic and a little S&P.

Salad.  Sliced tomatoes and peaches along with julienne Italian frying pepper.  Add a little EVOO, Balsamic vinegar and fresh ground black pepper.  Toss lightly.

The end result.

Have you ever tried to grill a tomato?  I do it all the time and it's great.  Once grilled, I put the tomatoes in a large bowl, drizzle on some dressing (usually Italian or some kind of vinaigrette), add some of my own seasoning (S&P,garlic etc) and sprinkle on some Parmesan cheese.  I swirl everything around to make sure the tomatoes are well coated.  Place tomatoes on plate and spoon the extra sauce on top.  Yum!

SD - I have tried grilling tomatoes.  They tend to fall apart on me.

CRG - The company is gone.  I figured I'd get some peace.  Now the daughters are coming over on Sunday for Father's day so I can cook something good.  :-\  They said they'll wash my car if it isn't too sunny, too hot, rainy, or cloudy.  I think I messed up somewhere.

Well give them $10 and tell them to take it to the car wash.

Son told me one time he would wash my Truck for $20. I said... OK!

He came in got $5 worth of quarters out of my change jar and when and sprayed it off.

So I gave him $10. I told him he spent $5 of my money and $5 of my gas.

They don't usually fall apart on me but the skins tend to peal off.  They don't always look great on the plate but the flavor explosion more than makes up for it.

I love chicken thighs, so does every one else in this household.

Try using whole cherry tomatoes.

I have done vegi ca-bobs many times using them and they held together well.

Nothing under the apron.  The neighbors called the cops when I went up for the mail  ;D

Arnie,  that's beautiful!

On grilled tomatoes, try firm Romas, cut in half along the length, coat with EVOO, S&P, then grill on the cut side only - very hot, just for the grill marks and it will be done.  They cook quickly.

Thanks for the tip Eric.  The problem up here is that the markets sell the hot house grown plastic tomatoes, even in the summer.

There's a local place:  http://www.shorttsfarmandgarden.com that's good.  I'll probably have to wait until mid-July for the tomatoes.

I'm growing a few of my own but they aren't looking too happy at the moment.  :(

Heck Aggie, that's not gourmet.  As I've said, I try to keep it fairly simple, inexpensive and creative during the week.  The weekends are something else - everyone seems to show up here.

My wife Debbie and I have a very simple agreement.  As long as I do the meal planning and cooking, cutting the lawn, general yard work, house maintenance and getting her car serviced, she's willing to do occasional vacuuming and grocery shopping, as well as buying pocketbooks and jewelry.  We have a great relationship.  I want my MAK!  ;D
