I used 3 hrs and 40 minutes of pecan/hickory.

And everything came out just about as soon as the smoke cleared.

The Ham, I re-rubbed with Maple extract and Vac sealed it in the fridge for a couple of days before slicing it.

Looks good Sonny.  I've never seen a part of a pig that looked like that ham  ;D

Chicken was on Bottom then the pork loin.

Those were the ones that needed cooking.

Everything else was basically pre-cook (Ham, Sausage, Boudain)

They needed some heat and smoke.

Set PID at 240 on bottom rack of chicken.

Camera is fine (Has a runny nose). I did lose a truck one time for 4 days. ;D
