Well I've made a few other posts today with most of the story... Brisket in first... then two racks of babys... temp never really came back good... babys into the oven in foil with AJ... then 30 minutes no foil in the oven... then FTC the ribs...

Dinner time comes and the IT on the brisket is only 170... punted on the brisket and went with Ribs, Potato Salad, Beans, Texas Toast, Corn on the Cobb, then Apple and Peach pie with Ice Cream...

Brisket hits 180 right as I'm serving so into FTC for it...

2 hours later I'm still too full to talk... I pull the brisket out and slice it up... for a first effort i am very pleased... but I felt like the guy from Monty Pythons the Meaning of Life where the one wafer thin mint makes him explode... tasted it but that was all I could do... The tears were for putting the freshly sliced brisket into a bag and into the fridge... I'm sure there are some killer sandwiches in the future for it...

Timing is sometimes harder than the cooking.

That's why FTC is our Friend.

It gives you a 2 to 6 hr window to serve a hot meal.

The Brisket will make some killer sammies.

Looks great!
