smoked turnips

Has anybody ever cold smoked turnips? I was at my brother in laws this weekend and he grew some so we were not sure what they tasted like raw so we tried it and it reminded us of raw potato so I thought I might try cold smoking some sliced up.

This sounds interesting. After you cut them up I would give them a light coating of olive oil before placing them in the smoker. I would go light on the smoke, and use maybe pecan or oak. Let us know if you do these and how they turn out.

Well I put olive oil on and 1 rack had oil and the other oil and Lowrey's salt. Smoked for 1 hour 20 min. using just the smoke generator and oak. Temp got to 115 and they turned out nasty. The wife said they taste like an ash tray but I don't think I will be saving this like cheese. They are going in waste basket. YUK.

Well, at least you tried.  I've had a few experiments take the B-line to the garbage.

Sorry it didn't work out WD.  I wonder how many people actually lick an ash tray for comparison?

Turnip is bitter and best boiled.  I like to put a little in with the taters for mashing.

If you didn't throw them out all ready, let them "age" for a few days to see if they will mellow out. Sounds like 40 minutes would have been good. I might give this a try and slice them thicker or quarter them for less exposed surface space.

I've been checking out a few recipes. Turnips seem to be one of those vegetable that you either love or hate. I've seen a lot of recipes that combine them with a fruit or other vegetable, such as pears, pumpkin , potato, apple etc.

Already trashed. I did like the taste when it was raw like I said it was like a raw potato.

That brought back some bad memories!  I went to Linton Hall Military School in Bristow, VA for elementary school.  There was a large vegetable garden next to the playground on one side.  One day a friend of mine hopped the fence and took some turnips.  He got caught on the way back over.  The four of us had to eat raw turnips for 3 meals a day for a week.  The smaller they are...the hotter they are.  I can not eat turnips to this day!!!

There are some things that I cant see smoke improving.  Turnips and rutabagas are in that group.  So are radishes, lettuce, spinach, cabbage, Brussels sprouts, and broccoli.
I like animals, they taste good!

Habanero Smoker

You have to try smoking brussel sprouts. A light coating of olive oil, about 40 minutes of cold smoke and then prepare them as you would in your favorite recipe.
