A few weeks back, CRG sent me some of his bread starter. The klutz I am, I dropped and shattered the jar. He was kind enough to send another.
It came in the mail, but had expanded to the point that enroute it burst out of the plastic jar (he didn't trust me with glass ;D ;D). So I had very little left. With his guidance I was able to nurse it back to health and here are the results.

Dough mixed and bread and rolls ready to go in the oven:

Finished product. Some of the smaller ones were a little overdone, but not by much. Next time I'll take them out a little earlier.

Now I have some homemade bread, some homemade pastrami - what should I do?  Pastrami sandwiches of course. Out of cheese, but the pastrami was good by itself.

All in all it was excellent. Again thanks Sonny for the patience and help.

Atta Boy Gus!

Bread looks great!

Pastrami looks even better.

Glad it all worked out ok.

Put a note on the jar ..... "Handle with Care" ;D

Each time I sent this starter to someone I learn something.

I am going to try vac pkg and a plastic jar combo next time .....

maybe with a chain around the lid! ;D

GusRobin,

I love this type of bread and have never gotten into this because of the concern of the amount of time involved in the starter care. So do you now feel like it's an easy additional task or the new will wear off soon and it's just great at first...and I can make some good bread, or don't really have time to do this the right way?  PM, me if you want to and we can talk on the phone and maybe I can get some starter from you? Thanks!

TR, I give about 1/2 of mine away just about every time I make it.

And who ever gets it is Thankful!

Did 82 rolls for the 4th Pig Feast and had NONE left.

And there have been times when at the two week mark that I

didn't want to make bread or did not have the time, so mix it up

took my cup od starter and flushed the rest. All is good in

Bread Land.

CRG,

Thanks, advice well taken! Like I said, I love this type of bread and I may be asking for some starter in the near future.  ;D

I will send you some anytime you want it, but with Gus not being too far from you,

I know he will help you out and it will be easier on the starter.

I will meet TMB on on Friday and I'm sure I'll meet Gus before to long! Thanks CRG!

TR- glad to give you a starter. I am going to be in and out of town between now and the 9th, family wedding and work. When I get back I'll make up a new starter and give you a call when it is ready and we can meet.
To answer your questions, I think it is worth it. (I am on a quest to makethe perfect hot dog/sausage buns). While you have to use the starter periodically, I believe you can go a week or two in between. If you don't have the time, you can just refeed it. ( add some flour, sugar and let it sit overnight then put a cup in a jar and you are "refreshed".) I'll print out the detailed instructions that CRG gave me when I give you the starter.
So I'll plan it to have it ready shortly after the 9th (if you can wait that long  ;D) It will still be almost as quick as having CRG make it and try to send it. Getting it fresh from me will be better than having it travel.
