Smoked Beef Ribs - Southern Style
Remember to smoke low and slow...

Smoked Beef Rib, smoked corn on the cob and some potatoes.

Remove the membrane from the back of the ribs.

I split the rack to fit my smoker and then prepared the marinade in a bowl.

I put the ribs and marinade in a resealable plastic bag, I use the foodsaver brand and will pull some of the air out.
I will let this marinade for about 3-4 hours.
After this time period pull the ribs out of the Frig and let stand 30 minutes.
Start your Smoker and add your wood, I selected Hickory. Make sure your that the heat reaches 250f+ before opening the door to inserted the ribs.
Pull the ribs out of the marinate, pat dry and apply an even coat of rub to all surfaces.
Once your smoker reaches 250f+ spray the steel rack with non-stick cooking spray and place the rack on the second set of rest down from top.
Next place your ribs on the rack, bone side down, and close door.
No peeking... Remember if your looking your not cooking!!!
After about 2 1/2 hours open the door and remove the ribs and place into a aluminum foil or pan, meat side down. In a small bowl I mixed together a liquid that I then poured over the ribs and wrapped close.
Return the foil package back into the smoker and close door for another 2 hours, or until tender.

Remember to let the beef rest in the foil for 15 minutes before adding BBQ sauce.

Here is the Marinade

Marinade
Makes 2 cups
1 cup of Sour Mash - I use "George Dickel Black Label" Note: You could replace with a bourbon.
1 cup of Soy Sauce
3 Cloves garlic, minced
2 Teaspoon Worcestershire Sauce
2 Teaspoon Onion Powder
2 Teaspoon Ground Ginger
2 Teaspoon Paprika
2 Teaspoon Sugar
1 Teaspoon of Ground Black Pepper

In a bowl, combine all the ingredients and mix well.

Thanks SS.  Sounds great.  I picked up some beef ribs the other day as Kroger here in Texas is having a big meat sale all week.  Will definitely use this marinade and let you know how it goes.

Is the rub you applied the same as marinade minus Sour Mash and Soy sauce?

Did you use regular sugar or Turbinado?

1-1/2 Tablespoon   Granulated Sugar
1-1/2 Tablespoon   Brown Sugar
1-1/2 Tablespoon   Kosher Salt
1-1/2 Tablespoon   Paprika
3/4    Teaspoon     Black Pepper
