Here is some GOOD info from the USDA for Summer time Grilling/Smoking/Cooking/buying meat.

Man am I ever glad that I live in Canada, the USDA has no power in Canada so
I do not have to worry about their silly guidelines to food safety ;)

Ross, they do some good, but like any US Guvment AGENCY...  They get their "directions" from congress, and they get their directions from the highest bidder.  I hate to STEP RIGHT IN IT (again), as I know many of my smoking brethren do not believe as I do, in a small and lean government, that cherishes freedom and liberty, BUT... The less government we have, the less corrupt government we have

That said... AS BAD AS THEY ARE, they're one of our BETTER "agencies"...
